Inside-Out Rocky Road Pie

Rocky road can be messy to eat and can seem so chocolate-y you feel guilty
- -Base-
- 350g Digestive Biscuits
- 300g Butter
- 200g Milk Chocolate
- 20g Caster sugar
- -Pie Filling-
- 400ml Double Cream
- 100ml Milk
- 300g Marshmallows
- 200g Chocolate (white or milk)
- 100g Sultanas
- 100g Cherries
Espresso Mousse Brownies

To make the brownies: Preheat oven to 350 degrees (180 C)
- Makes 1 8×8-inch pan
- FOR THE BROWNIES
- 1/2 cup (50 grams) unsweetened cocoa powder
- 1/2 cup (64 grams) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick or 113 grams) unsalted butter
- 1 tablespoon instant espresso powder
- 1 cup (200 grams) sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- FOR THE MOUSSE
- 25 large (or 250 mini) marshmallows (130 grams)
- 3 tablespoons (30 ml) strong espresso
- 1 cup (250 ml) heavy cream
- Whipped Cream, optional

1.Preheat the oven to 180ºC/gas mark 4
- 250g plain flour, sifted twice.
- Pinch of salt.
- 2 tsp baking powder.
- 190g caster sugar.
- 115g unsalted butter, at room temperature and cut into cubes.
- 2 large eggs, at room temperature.
- 120ml whole milk.
- 2 tsp vanilla extract.
- For the meringue frosting
- 4 large egg whites.
- 200g granulated sugar.
- ¼ tsp cream of tartar.
- Pinch of salt.
- To decorate
- 15 white marshmallows (one per cupcake).
- Black fondant or chocolate chips

- 50g (2 oz) Butter
- 250g (9 oz) Dark Chocolate (70% Solids), Chopped
- 60ml Hot Water
- 284ml Double Cream
- 1 tsp Vanilla Extract
