- Pie Filling.
- 1 sliced leek
- 1 chopped carrot
- 100g bacon lardons
- 1 clove of garlic
- 500g chicken thigh diced
- Tarragon Sauce.
- 20g butter
- 20g flour
- 300-350ml milk.
- 2 tbsp double cream
- 2 tsp of tarragon
- 1tsp dijon mustard
- splash of lemon juice
- Suet Pastry
- 190g self raising flour
- 100g beef suet
- 1/2 tsp of sea salt
- 55-100 ml of water
- 1 egg yolk.
Mushrooms in White Wine (chicken, cheese & brandy optional)

Fry the oil and butter in a pan
- Dollop of Butter
- Splash of Cooking Oil
- Splash of White Wine
- Tarragon (few sprigs)
- Double or Whipping Cream (1 pot)
- Salt & Pepper to taste
- Optional:
- Splash of Brandy
- 40g Grated Cheese
- 375g Chicken Pieces
Prime rib beef with shallot sauce

Coat the beef with 50 g of butter (if oven roasting)
- Ingredients for 6 people
- 1 prime rib of beef, 2 kg (with the bone)
- 200 g butter
- 2 eggs
- 2/3rds cup of vinegar (wine..)
- 2 shallots
- tarragon
- chives
- Watercress for garnish
- Garnish with veg according to the season

- 2 tbsp pickles, diced
- 1/2 tsp fresh tarragon
- 1/2 tsp shallots, finely chopped
- 1/2 tsp parsley, finely chopped

- pinch of mustard seed

- 1 large shallot, chopped
- 150g small cherry tomatoes, halved, or 3 medium tomatoes, deseeded and chopped
- 3 tbsp tomato ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp grain mustard, optional
- ½ lemon, juice only
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- small handful tarragon leaves, finely chopped
