Uncle Herb's Beef Jerky

Ingredients
- 1 C brown sugar
- 1/2 C pickling salt
- 1/2 C soy sauce
- 1 tsp black pepper
- 1 capful liquid hickory smoke
- 4 or 5 steaks
- water

Preparation
Step 1
Combine brown sugar, pickling salt, soy sauce, black pepper, hickory salt in 1 gallon jar with lid. Add enough water to fill jar half full.
Step 2
Cut steaks into 3/8" strips, cutting off fat and against the grain.
Step 3
Place steaks in jar and top with water. Place lid on jar and refrigerate for 12-18 hours.
Step 4
Drain liquid from steaks, and place strips on wire rack. Air dry for 1 hour, then cook in oven at 160F, leaving door slightly ajar.
Step 5
Place cooked strips in container and let dry for 10-12 hours. Punch holes in container lid and refrigerate.
