Preparation
Step 1
Slice potatoes thinly (about the thickness of a one pound coin) and preheat oven to 200c
Step 2
Generously butter an oven-proof frying pan and place one layer of potatoes, slightly overlapped. Season with salt, pepper and garlic powder and repeat with the remaining potato slices
Step 3
Generously dot top layer with butter then cover with tin foil which is coated in butter. Add the lid on top of tin foil and leave on a medium hob until the bottom layer is turning golden - about 10-15 minutes.
Step 4
Transfer the saucepan to the oven (remove lid if it's not oven proof) and cook for a further 25-30 minutes or until potatoes are soft
For more crispy potatoes slice more thinly - these are great with malt vinegar
