Ingredients

  • 10 ml oil
  • 1.2 kg fresh tomatoes
  • 1 large onion
  • 1 carrot
  • 1 celery stick
  • 2 squires of tomato puree
  • pinch of sugar
  • 1.5 pints of stock
  • Handful of fresh basil

Preparation

Step 1

Soften the carrots, onions and celery in the oil

Step 2

Add the tomato puree, sugar and fresh tomatoes. Stew together for 10 minutes.

Step 3

Add the stock and simmer for 20 minutes.

Step 4

Add a good handful of basil leaving a few sprigs for garnish. Blend into a smooth soup.

Total soup prepared is 563 calories (141 calories per serving)
