Ingredients
- 10 ml oil
- 1.2 kg fresh tomatoes
- 1 large onion
- 1 carrot
- 1 celery stick
- 2 squires of tomato puree
- pinch of sugar
- 1.5 pints of stock
- Handful of fresh basil

Preparation
Step 1
Soften the carrots, onions and celery in the oil
Step 2
Add the tomato puree, sugar and fresh tomatoes. Stew together for 10 minutes.
Step 3
Add the stock and simmer for 20 minutes.
Step 4
Add a good handful of basil leaving a few sprigs for garnish. Blend into a smooth soup.
