Preparation
Step 1
Beat the softened butter with icing sugar mixture till a smooth, pale and fluffy mixture is formed. Add salt. Add plain flour a little at a time till a smooth dough is formed.
Step 2
Divide the dough into two and add cocoa powder into one half of the dough. Wrap both pieces of dough in cling film. Chill in the fridge for 20 minutes.
Step 3
Divide each piece of dough into two. Roll out each piece into a long thick cord. You will end up with two white and two chocolate cords.
Step 4
Beat the egg white. Arrange the cords to form a chequered pattern brushing egg white over each roll so that they stick to each other. Wrap in cling film and chill in the fridge for 10 minutes.
Step 5
Preheat the oven at 190 C / Gas Mark 4. Slice the dough in 5 mm slices and place on a baking tray lined with greaseproof paper about an inch apart.
Step 6
Bake them for 12 to 15 minutes. Remove the tray from the oven and after 5 minutes transfer them on a cooling rack. Store in an airtight container.
