Leftover Cheeseboard Pie

This is basically a lot of left over cheese, some filo pastry, potato slices and onions. It's most definitely NOT diet friendly but eating a warm slice (or 2 or 3) of this on a Christmas afternoon is seriously good! Don’t throw those end bits of cheese from your festive cheeseboard, gather them up and make something yummy. Use whatever you have - blue cheese will give it a strong flavour whereas a brie or Camembert, a creamy texture - the choice is yours!
Ingredients
- • Left over cheese
- • 2 medium sized potatoes peeled and thinly sliced
- • 1 large onion cut into rings
- • Filo pastry
- • Melted butter
- • Salt and cracked black pepper to season

Preparation
Step 1
Use a 23-24cm round pie dish and brush with melted butter
Step 2
Line with 3 sheets of filo pastry ensuring plenty of spare pastry hangs over all edges.
Step 3
Put a single layer of potatoes across the bottom of the dish
Step 4
Sprinkle the onion rings on top of the potato
Step 5
Liberally chuck in the cheese on top and season.
Step 6
Fold over the sides of the filo pastry to cover the filling.
Step 7
Brush with more melted butter.
Step 8
Cook in the oven at 200c / 180c fan for 20 mins until golden brown.
