- 200g Vegetarian Mince
- 1 Large Onion (Chopped)
- 2 Differently Coloured Peppers (Chopped)
- 2 Carrots (Chopped)
- 100g Frozen Peas
- 100g Tinned Sweetcorn
- 1 Courgette (Chopped)
- 1 Tin Kidney Beans
- 1 Tin Haricot Beans
- 400ml Tomato Passata
- 1 Litre of Vegetable Stock
- 2 Teaspoons Cumin Seeds
- 2 Tablespoons Chilli Powder

Preparation
Step 1
Fry the onion in a small amount of oil, adding the cumin seeds and chilli powder, for 3 minutes
Step 2
Add the peppers, carrot and vegetarian mince, stir for 5 minutes
Step 3
Add the passata, vegetable stock, peas and sweetcorn then boil and simmer for 30 minutes
Step 4
Add the courgette, kidney beans and haricot beans – cook for a further 10 minutes
This can be made in advance and then just heat up in a pan
Freezes well, defrost before reheating
