- 100g Sugar
- 100g Butter
- 100g Self raising flour
- 2 Eggs
- 55g Caster sugar
- 2 tbsp water
- 55g Pineapple
- Line a baking dish with grease proof paper and preheat the oven to Gas mark 6

Preparation
Step 1
Add the sugar, butter and eggs together in a large bowl and mix together
Step 2
Slowly fold in the flour (this can be sieved in)
Step 3
Heat the caster sugar and water in a pan on a low heat until the sugar changes in color (becoming caramel)
Step 4
Place the pineapple in the bottom of a baking dish and then pour over the caramel (for best results allow to cool a little)
Step 5
Add the sponge mixture and place in the middle of the oven
Step 6
Bake for 15 - 20 mins (using a skewer to check the cake is cooked completely)
Step 7
Serve immediately
Add cherries for extra taste and decoration
