Chocolate Fudge Loaf

Ingredients
- 400g Milk Chocolate (or plain) broken into small pieces
- 120g Unsalted butter
- 140g Golden caster or soft brown sugar
- 100ml single or whipping cream
- 5 medium eggs, beaten
- 2 tbsp plain flour, sifted
- Dash of fudge/caramel essence
- 7x30cm cake tin
- Deep roasting tray which is big enough for the cake tin to fit in
- Grease proof paper

Preparation
Step 1
Preheat the oven to gas mark 2 (150c)
Line the cake tin with the grease proof paper
Step 2
Place the chocolate, essence, butter and sugar into a large pan over a low heat. Melt the mixture slowly until it is smooth, then add the cream
Step 3
Take the pan off the heat then whisk the eggs into the chocolate mixture followed by the flour
Step 4
Pour the mixture into the cake tin and place into the centre of the roasting tin.
Step 5
Half fill the roasting tin with water then bake for about 1hr30mins
Step 6
Leave to cool for 10 mins before placing into the fridge to cool completely
Step 7
Serve once chilled
Serve with fruits such as cherries, redcurrants and raspberries or even a splash of fruit coulis
