Preparation
Step 1
Pre heat some oil in a pan before shredding the bacon and thinly sliced peppers
Step 2
Cook until the bacon is very crispy and the bacon is shrivelled
Step 3
Squeeze in the lemon juice and pour the vinegar to mix with the oil to create a light dressing, add salt and pepper to your liking
Step 4
Throw in the chopped onion, chopped plum tomato, mixed leaf and give this a quick toss, place a single large leaf of iceburg on the place and spoon into the center of this and enjoy this simple and tasty warm bacon salad.
For the extra hungry and to add an extra crispy layer rip in some toast which you have overcooked and allowed to cool, butter is optional but only butter after cooling to maintain the crispness of the toast element
The peppers taste better charred and bring an extra element to the dish. Feel free to combine different cuts of bacon and smoky and non smoked for flavour variation.
