  • Flat brown mushrooms
  • Garlic
  • mustard
  • Ham
  • Puff Pastry
  • Egg yolk

Preparation

Step 1

Brown the beef and slice into even sized cubes, again brown the newly revealed surfaces to seal in the juices and spread immediately with mustard while warm.

Step 2

Finely chop the mushrooms and crush in a clove of garlic, heat in a pan until dry and paste like, place aside to cool

Step 3

Cut small servings of thinly sliced ham, coat with the mushroom paste thinly and add a cube of beef to the center and wrap so that it is fully covered without overlap

Step 4

Place this parcel into a puff pastry casing to cover evenly just the same, wrapping to the underneath so it will remain sealed during the cooking process, transfer this to the refridgerator for 10 minutes

Step 5

Eggwash the surface of the pastry for a golden colour, feel free to sprinkle paprika if desired and place in the oven to bake at 180 degrees for 15 minutes

Leave enough space between pastries for expansion and heat to travel throughout the oven, cooking times may vary depending on the size of your beef filling.
