Ingredients

  • 300g Quorn chicken style pieces
  • Marinade:
  • 2 tbsp Tikka Masala paste
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • ½ tbsp turmeric
  • 1 tsp chilli powder
  • 140ml natural yoghurt
  • 1 tbsp tomato puree
  • 2 garlic cloves
  • Curry:
  • 1 tbsp oil
  • 2 medium onions
  • 1 red pepper
  • 400ml vegetable stock

Preparation

Step 1

Mix all the marinade ingredients together in a bowl and add the Quorn pieces

Step 2

Stir until evenly coated and leave to marinade for at least 30 minutes

Step 3

Heat the oil and fry the onions then add the pepper

Step 4

Add the Quorn pieces and the marinade to the pan and stir fry for 10 minutes

Step 5

Add the stock mixing well and bring to the boil

Step 6

Reduce the heat, cover and simmer for at least 30 minutes

Step 7

Serve with rice
