Indian chicken burgers with avocado and coriander in pita bread

- 4 pita breads
- 500 g of chicken
- 1 egg
- 100 g breadcrumbs
- 1 onion
- 3 avocados
- 3 natural yoghurts
- 1 lemon
- 2 teaspoons curry
- mesclun salad mix

Preheat the oven to 180 degrees.
In a blender, mix the onion, quartered, a good handful of coriander, the chicken breasts, cut into pieces, and a drizzle of olive oil. Mix until all the ingredients are well blended. Pour the mix into a bowl, add the beaten egg, breadcrumbs, curry, salt and pepper, and finally a drizzle of olive oil. Mix well with your hands or a wooden spoon.
With this mixture, make four patties with a circle or by hand, be careful not to make them too thick, and place on a baking tray lined with greaseproof paper. Precook the patties in the oven for 10 minutes.
Then make the avocado cream, mixing the avocados, yoghurt, lemon juice, a drizzle of olive oil, salt and pepper. Place in the fridge.
Brown the patties in a pan with a little oil and butter. Place the pita breads in the oven a few minutes and open them in half.
Garnishing the plates:
Spread the avocado cream on both sides inside the pita bread, then add the chicken burger. Serve with some salad leaves and place a leaf or two inside the bread.
