Griddled Jazzy Potatoes with Herbed Lamb Chops

- 1 clove garlic
- 1 lemon
- Small bunch parsley, finely chopped
- 3 tbsp olive oil
- 4-6 lamb cutlets or chops
- 300g Jazzy potatoes
- Green veg or salad to serve

Preparation
Step 1
In a pan of boiling salted water, cook the potatoes for 20 minutes until tender all the way through.
Step 2
Heat a griddle pan till very hot. Cook the chops for 5 minutes on each side. (This should cook medium but adjust depending on the thickness of the chops and how well you like your meat cooked.)
Step 3
Let the lamb rest in a warm place. Drain the potatoes and when cool enough to handle, slice them in half and toss in a little seasoned oil. Wipe any debris off the griddle and reheat to smoking hot. Place the potatoes cut side down on the griddle and char for a few minutes until they get stripes.
Step 4
Toss the potatoes in the remaining herb dressing and serve them with the lamb and some green veg or a salad.
