Yoghurt cake with a zest of lemon
You can adapt this recipe to make any flavour of cake you like by changing the flavour of the yoghurt or adding chocolate chips!
- 1 pot of vanilla yoghurt (keep the pot)
- 2 pots of sugar
- 3 pots of flour
- 1 pot of oil
- 3 eggs
- 1 sachet of baking powder
- 1 sachet of vanilla sugar
- grated lemon zest
- icing sugar to sprinkle on top

Whisk the yoghurt and flour together.
Add the eggs, sugar, oil, baking powder, lemon zest and vanilla sugar.
Place in a buttered and floured loaf tin.
Bake at 170 ° C for 40 minutes depending on the size of the tin. Check it's cooked with the tip of a knife.
Remove from the oven and leave to cool.
Sprinkle with icing sugar and serve.
This cake is delicious served with a fresh fruit salad or a yoghurt sorbet!
