Pear tiramisu with speculoos

Ingredients
- 250 gr marscarpone
- 3 eggs (yolks and whites separated)
- 3 tablespoons caster sugar
- 1 tablespoon Marsala
- 3 tablespoons of speculoos biscuit spread
- 6 pears
- 1 packet of speculoos biscuits (or ginger biscuits)

Preparation
Step 1
Separate the whites from the yolks. In a bowl, whisk the yolks with the sugar then add the Marsala and marscarpone. Add the speculoos spread and mix well. Beat the whites until stiff and fold them into the cream.
Step 2
Garnish the serving glasses:
Put a dollop of cream in the bottom. Crumble 2 speculoos biscuits on top of the cream. Cut 3/4 of a pear into pieces and put in the glasses. Add some more mascarpone cream and a biscuit. Sprinkle with sugar.
Serve well chilled.
