Preparation
Step 1
Squeeze the juice of 2 lemons and finely slice the zest of a lime. Blanch 3 egg yolks in 100g of caster sugar. Stir in 250g of mascarpone. 
Stir, add the lemon juice and a little lime zest, keeping a little aside to decorate the dessert. Mix everything.
Step 2
Separately, beat 3 egg whites until stiff (with a pinch of salt if necessary). Incorporate them gradually, and very gently, in the first preparation of mascarpone. Place into ramekins and refrigerate for 3 hours.
Step 3
When ready to serve, sprinkle with a little lime zest for colour.
