Soak the salmon steaks in the orange wine for 2 minutes, salt them lightly with Guérande sea salt, then dip them in,on both sides, in bread crumbs.
Brown lightly the shallots in a pan with a knob of butter.
Finally, fry the salmon in the same pan with the shallots.
