Peel the onions and cut into thick slices

- 1 rabbit, cut into pieces (1.4 kg)
- 600 g red onions
- 1 chopped shallot
- 30 g + 30 g + 20 g butter
- 25 cl of red wine
- 2 tbsp of sherry vinegar
- 1 sprig of thyme
- 2 sage leaves
- 1 tsp. caster sugar
- Salt and pepper
Potatoes, to be boiled and served with the stew.
