- 1 clove of garlic

- For the emulsion of parsley
- 1 bunch of parsley
- A touch of garlic
- 5 tbsp olive oil
- 5 tbsp of water
- salt
- Decoration:
- Some diced cooked beetroot
- Some diced feta
- Pine nuts
- A few drops of balsamic cream
Thick Mushroom Soup with Garlic and Parsley

- 25g pure margarine or dairy free margarine
- 1/2 medium onion, finely chopped
- 1 garlic clove, finely chopped
- 40g spelt or millet flour
- 700ml vegetable stock
- 250g chestnut mushrooms, sliced
- 1 tbsp fresh parsley, chopped
