Chocolate Cupcakes With Vanilla Cream Cheese Icing

Preheat oven to 180°C. Line 12-cup muffin tray with cupcake liners, and put aside
- Cupcakes
- 1 egg
- 1 cup brown sugar
- 2/3 cup buttermilk
- 1/2 cup vegetable oil
- 2 tablespoons vanilla Greek yoghurt (or substitute with plain Greek yogurt)
- 1 tbsp vanilla extract
- 1 1/2 cups plain flour
- 3 tbsp cocoa powder
- 3/4 teaspoon baking powder
- A pinch salt,
- Cream Cheese Icing
- 1/2 cup softened cream cheese
- 2 tbsp softened butter
- 1 tsp vanilla extract
- 2 1/2 cups powdered sugar
- Add mik if needed
- Red sugar or red sprinkles for decoration
Chaing-Mai Sticky Rice with Mango

Soak the rice in a cup water for 30 minutes, or if you have time up to four hours
- 1 cup Thai sweet rice (aka sticky rice or glutinous rice)
- 2 mangoes, finely sliced
- 5 tbsp palm sugar (or substitute with brown sugar)

- 1 1/4 cups white sugar

Easy Beer-Can Chicken

Death by Chocolate Mousse

- 300g good-quality dark chocolate, chopped
- 3 eggs
- 1/4 cup caster sugar
- 1 tbsp cocoa powder, sifted

- 350g self-raising flour,

- Eva's homemade jam (normal jam will do, I suppose).
