Chocolate Cupcakes With Vanilla Cream Cheese Icing 1 Picture

Ingredients

  • Cupcakes
  • 1 egg
  • 1 cup brown sugar
  • 2/3 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tablespoons vanilla Greek yoghurt (or substitute with plain Greek yogurt)
  • 1 tbsp vanilla extract
  • 1 1/2 cups plain flour
  • 3 tbsp cocoa powder
  • 3/4 teaspoon baking powder
  • A pinch salt,
  • Cream Cheese Icing
  • 1/2 cup softened cream cheese
  • 2 tbsp softened butter
  • 1 tsp vanilla extract
  • 2 1/2 cups powdered sugar
  • Add mik if needed
  • Red sugar or red sprinkles for decoration

Preparation

Step 1

Preheat oven to 180°C.
Line 12-cup muffin tray with cupcake liners, and put aside.

Step 2

In a large mixing bowl, whisk together egg, sugar, buttermilk, oil, Greek yoghurt and vanilla, until smooth.

Step 3

Add the flour, cocoa, baking soda and salt, and whisk until combined, but be careful not to over mix.

Step 4

Carefully whisk in the red food colouring to achieve a deep shade of red. Not too much or your cupcakes will have a bitter aftertaste.

Step 5

Put 2 tablespoons of batter into each cupcake cup (until each is about 3/4-full).

Step 6

Bake for about 20 to 25 minutes, or risen.
Take a toothpick and insert into the centre - if it comes out clean, they're ready!

While cupcakes cool, make the icing.

Vanilla Cream Cheese Icing:

In a large mixing bowl, combine cup softened cream cheese, softened butter and vanilla extract.

Step 10

Add powdered sugar, and whisk thoroughly until smooth. Add more sugar is needed to reach the right consistency.

Add frosting to the tops of the cupcakes and smooth with a wet knife.

Decorate with red sugar and red sprinkles.

Keep the cupcakes out fo the fridge and in an airtight container at room temperature to keep them from drying out.
