  • 4 egg whites
  • 1 1/4 cups white sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 2 tsps cornstarch
  • 1 pint heavy cream
  • 6 kiwi
  • peeled and sliced

Step 1

Preheat oven to 150°C
Cut a circle out of baking paper and set aside.
Beat egg whites in a large bowl and gradually add in the sugar and beat until thick.
Fold in vanilla extract, lemon juice, and cornstarch.

Spoon the mixture onto the baking paper circle and work from the centre to spread it out. Leave a slight depression in the centre and a slight edge on the sides.

Bake for an hour and then leave to cool.
In a small bowl, beat heavy cream until stiff peaks form; set aside. Remove the paper, and place meringue on a flat serving plate. Fill the center of the meringue with whipped cream, and top with kiwifruit slices.

Drizzle with passionfruit juice and serve with cream.
