Cold Seafood Buffet

- 1 cooked lobster
- 2 cooked blue swimmer crabs
- 4 cooked Moreton bay bugs, halved and cleaned
- 1kg cooked medium king prawns
- 24 Sydney rock oysters
- 200g smoked salmon slices
- 400g cooked pickled or marinated octopus
- 2 long green chillies, coarsely chopped
- 2 garlic cloves, coarsely chopped
- 2 green onions, coarsely chopped
- 2 tablespoons fish sauce
- 2 tablespoons finely grated palm sugar
- 1/3 cup fresh coriander leaves
- 1/3 cup lime juice
- 2/3 cup whole-egg mayonnaise or plain Greek-style yoghurt
- 1 1/2 tablespoons finely chopped fresh dill
- 2 teaspoons finely grated lime rind
White Chocolate Bark

This is a great recipe for quick easy chocolate for when you're on-the-go, just make sure you have chocolate wrappe
- One block of white chocolate (no coconut)
- 2 tsp vegetable oil
- 1/2 small bag of lollies
- 1/2 small bag of mini chocolate easter eggs with hard shells
- 1/2 small bag of pretzels (broken)

Brazilian Feijoada

A authentic Feijoada recipe, the national dish of Brazil!
- 1 pound of cooked red beans
- 1 pig foot, cut in two,
- 2 pig tails
- 200g diced pork
- 200g cut pork chops
- 1/2 pound sausage
- 1/2 pound smoked sausage
- 150g bacon
- 1 onion
- 2 bay leaves
- Vinegar, salt, pepper and minced garlic
- 3 tablespoons chopped parsley and chives
- "Gaúcha" Sauce :
- 3 ripes tomatoes, seeds removed
- 1 onion
- 1 green bell pepper
- 1 ladle of the Feijoada liquid
- 5 cl ice water
- 2 tablespoons chopped parsley and chives
- salt, pepper, olive oil and vinegar
- " Farofa" :
- 50g butter
- 250g cassava flour
- Salt, pepper and chilli powder
- Sauteed cabbage :
- 10 cabbage leaves
- oil, minced garlic, salt
- 3 oranges, peeled and cut into wedges

- 320g sheet of ready-rolled puff pastry

- 100g grated cheddar cheese grated
