Ingredients

  • 350g self-raising flour,
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 85g butter, cubed
  • 3 tbsp caster sugar
  • 175ml milk
  • 1 tsp vanilla extract
  • Lemon juice
  • 1 egg
  • Eva's homemade jam (normal jam will do, I suppose).
  • Clotted cream

Preparation

Step 1

1. Preheat oven to 220*C
2. Mix flour, salt and baking powder into a bowl
3. Rub the butter into the mix with your fingers until crumbly.
4. Mix in the sugar.
5. Heat the milk the microwave for 20 - 30 seconds, until warm.
6. Add vanilla and lemon juice, then put aside.
7. Make a hole in the dry mixture, then add the liquid, mix well.
8. Sprinkle flour onto the bench and food the dough with your hands. Add more flour, if needed. Pat into a ball.
9. Take a round cutter and cut out circle from the dough.
10. Whip up an egg in a cup and brush the yolk over the tops of your dough circles.
11. Brush the tops with beaten egg, then carefully place them onto the tray.
12. Bake for 10 mins until risen and golden on the top. Must eat with jam and clotted cream, no excuses.

Dip your biscuit cutter in flour before cutting into the dough.

Place the baking tray in the oven as it preheats.

Add sultanas to the dough and also serve with fresh cut strawberries, if you want to be particularly fancy.
