  • 300g good-quality dark chocolate, chopped
  • 3 eggs
  • 1/4 cup caster sugar
  • 1 tbsp cocoa powder, sifted
  • 300ml thickened cream

Preparation

Step 1

Put the chopped chocolate in a heatproof bowl over a pan of steaming water and stir until melted.
Take the bowl off the heat and set aside.

Crack the eggs and put in with sugar into a bowl.
Beat with an electric beater or until the mixture is pale and has doubled in volume (usually within 5 minutes).

Stir in melted chocolate and cocoa powder until smooth.

In another bowl, whip cream until thickened.
Then stir the cream into the chocolate mixture.

Pour mixture into serving glasses and chill in fridge for min 1 hour.

Top with extra whipped cream and grated chocolate, if you dare.
