Coarsely grate the cucumber into a dish – some folk peel it first but I don’t bother
- 1 small cucumber
- 300 ml Greek yoghurt
- 1 garlic clove crushed
- 1 tbsp of chopped fresh mint
- Salt and pepper

Grate the courgettes and cook in a tablespoon of olive oil, salt and pepper
- For the cake:
- 3 eggs
- 50 g flour
- 1/2 teaspoon baking powder

- 1 big cucumber (shredded)
- 2 cloves garlic
- 1 lemon
- 1 bunch fresh dill (chopped)
- or 2 tablespoons dry dill
- Heavy pinch of salt
- Lots of black pepper
- Olive Oil (duh)
