  • For the cake:
  •   3 eggs
  •   50 g flour
  •   1/2 teaspoon baking powder
  •   1 tablespoon of crème fraîche
  •   2 courgettes (about 400 g)
  •   salt and pepper
  • For tzatziki sauce:
  •   2 tablespoons of crème fraîche
  •   1/4 of cucumber
  •   1 clove of garlic
  •   salt and pepper
  •   200 g smoked salmon (about 5 slices)

Step 1

Grate the courgettes and cook in a tablespoon of olive oil, salt and pepper. Cook them until they are completely dry and they are drained completely of water.

Step 2

Separate the whites from the yolks.

Step 3

In the bowl containing the yolks, add the flour, baking powder, cream, salt and pepper. Then add the cooked courgettes. Reserve.

Step 4

Beat the egg whites with a pinch of salt. Very gently mix into the first preparation.

Place a sheet of heavily buttered greaseproof paper on a baking tray and spread out the mix evenly. Bake for 10 minutes.

Step 6

During this time, mix the garlic, cucumber, cream, salt and pepper. When the cake is cooked, turn it out onto a clean dish cloth, brush with the sauce and place the salmon, torn into strips, on top. Roll.
