Cake with Baileys & Toblerone-mousse filling

This is THE cake which my sister-in-law made for my wedding day. It was delicious and everyone wanted the recipe!

Ingredients

  • Ingredients cake (round 24cm diameter or square 20x20)
  • 5 eggs
  • 150g sugar
  • 125g flour
  • 25g corn flour
  • Sachet of vanilla sugar
  • Pinch of salt
  • Ingredients Baileys-toblerone mousse
  • 300g toblerone
  • 200ml cream
  • 100ml Baileys

Preparation

Step 1

Put the eggs, sugar and vanilla sugar in a bowl and put the bowl in a tub of hot water.

Step 2

Mix the sugar through the eggs, beat until the sugar is fully dissolved and je have a thick, light and foamy mass. This should take at least 10 minutes! (If using a mixer, put the eggs in warm water before you start)

Step 3

Sieve the flour and carefully scoop it together with the corn flour and the salt through the egg mixture. Don’t mix it, carefully scoop!

Step 4

Put the mixture in the cake dish and bake for about 45minutes in a preheated oven at 185°C (For the best result start the temperature at 150°C for15minutes, then 170°C for a further 15minutes and finish with 185°C)

Step 5

Heat up the Baileys and add the chocolate to melt.

Step 6

Cool the baileys-toblerone mixture and at the same time whip the cream until it’s half whipped.

Step 7

Add the cooled mixture and whip it further until it’s a nice mousse-texture.

Step 8

Leave the mousse to stiffen further in the fridge.

Step 9

When the cake has completely cooled, slice the cake in half.

Step 10

Once the mousse has reached its right consistency, spread it over the bottom half and place the top half back on top.

Once the cake has been filled, you can decorate it with your favourite decorations. Eg ganache, marsipan,...
