Sticky Ginger Cake

Ingredients

  • For the cake:
  • 200g Self-Raising Flour Sifted
  • 200g Caster Sugar
  • 1 tsp Bicarbonate of Soda
  • 3 tbsp Ginger powder
  • 55g Margarine
  • 1 egg Beaten
  • 2 tbsp Golden Syrup
  • 240ml Hot Water (not Boiling)
  • For the Sticky sauce:
  • 1 tbsp golden syrup
  • 1 tbsp ginger powder
  • 50ml lemon juice
  • 25g Brown sugar

Preparation

Step 1

Pre-heat oven 180/ gas mark 4. Line any tin you wish to use and put to one side.

Step 2

To a mixing bowl add the sifted flour, sugar, ginger, Bicarbonate of soda. Rub in the Margarine until it forms a light breadcrumb texture.

Step 3

In a separate bowl add the Golden syrup to the Hot but not boiling water. When combined add to the flour mixture.

Step 4

Add the Beaten egg and mix well. When done pour into the prepared tin.

Step 5

Bake in the middle of the oven for 1 hour.

Step 6

While Cake is cooking heat the sauce ingredients together in a saucepan - leave to boil for 5 mins. When cake is done, make tiny holes with a skewer and pour over the sauce.

Step 7

Let it cool for 30 mins in the tin then turn out and leave to cool for a further 20 mins.

Step 8

Cut into cubes and enjoy!

When cutting into cubes use a sharp hot knife it will make it easier to slice.
