- 1 x red pepper
- 1 x yellow pepper
- Parmesan shavings
- 2 x garlic cloves
- Salt and pepper
- Olive oil

Preparation
Step 1
Preheat the oven to 180 degrees. Cut the red and the yellow pepper into strips, place in a baking tray and toss in olive oil. Sprinkle with salt and pepper.
Step 2
Crush the garlic cloves against the edge of a knife and leaving them in the skins, place in the baking tray with the peppers.
Step 3
Put the peppers in the oven for approximately 10 mins until cooked but not coloured. Allow to cool. Serve piled up covered in Parmesan shavings.
