  • 30ml of butter
  • 1.25L of chicken stock
  • 7 cut and peeled carrots
  • 1 cup of diced potato
  • Salt
  • Pepper

Preparation

Step 1

- In a large saucepan, soften the onion with the butter on a low heat. Add stock, carrots and potato cubes. Bring to the boil.
- Cover and leave to simmer gently for 20 mniutes, or until the vegetables are tender.
- In a blender, blitz the contents until you obtain a smooth mixture. Season to taste.
- Add herbs, croutons, bacon or any topping you wish.
