Ingredients
- Carrot and courgette soup
- 50g butter
- 225g carrots peeled and sliced
- 225g courgettes trimmed and sliced
- 600ml stock
- 1 bay leader
- 1 onion sliced
- 1 tablespoon tomato purée
- 1 1/2 tablespoons sugar
- Salt and pepper

Step 1
Melt butter add carrots and courgettes cover and cook low for 10 minutes veg begin to soften
Add stock bay leaf tomato purée sugar to the saucepan and simmer for 30 mins.
Remove bay leaf and purée the soup in a blender. Season to taste.
