Ingredients
- 2 T ghee or butter
- 1 red onion chopped
- 1 garlic clove crushed
- 1/2 celery stick chopped
- 1 tsp turmeric
- 1/2 tsp garam masala
- 1 green chilli deseeded and chopped
- 1/2 tsp cumin
- 1 T chopped coriander
- 1/2 cup basmati rice rinsed
- 1/2 cup green lentils
- 1.25 c vegetable juice
- 2.5 c vegetable stock
- springs of fresh coriander (cilantro) to garnish

Step 1
Melt the ghee in a pan, add the onion, garlic, and celery and cook until soft for about 5 min.
Step 2
Add the other spices and cook until fragrant about 1 min. Add the rice and green lentils. Stir until the rice is translucent, about 1 minute.
Step 3
Pour the vegetable juice and vegetable stock into the saucepan and bring to a boil. Cover and simmer over a low heat for about 20 minutes, or until the lentils are cooked. They should be tender when pressed between fingers. Stir occasionally.
Step 4
Transfer to a warm serving dish, garnish with cilantro sprigs and serve piping hot.
Is also good served with tomatoes and yogurt.
