  • Cheesecake base:
  • 2 cups biscuit crumbs
  • 50g sugar
  • 115g melted butter
  • Cheese cake batter:
  • 1kg cream cheese
  • 200g sugar
  • 30g self-raising flour
  • 5 eggs
  • 80ml heavy cream
  • 1 tp vanilla extract
  • 1 tbsp lemon zest
  • Toppings:
  • 240ml sour cream
  • 2tbsp sugar
  • 1tp vanilla extract

Step 1

To the biscuit crumbs, add in sugar and melted butter and stir well.

Step 2

Pour the mixture into a cake tin. Press using a spoon to make them flat. Cover using a plastic wrap and refrigerate it.

Step 3

Preheat oven to 180oC.

Step 4

Beat the cream cheese until smooth.

Step 5

Add sugar and flour and mix everything well.

Step 6

Add the eggs one at a time after each mix. Mix till smooth.

Step 7

Add the cream and lemon zest and mix until smooth.

Step 8

Pour the cheese batter onto the crust in the cake tin.

Step 9

Bake for 15min. After that, set temperature to 120oC and bake for 1 hr 30min.

Step 10

Pour the mixture of toppings on top of the hot cheese cake. Bake for another 10-15min.

The cheesecake is done when it appears to be firm and a bit wobbly at the center. Cool the cheesecake completely before storing it in the fridge.
