  • 1 chicken breast
  • 1 garlic clove
  • 1 tbsp. ginger
  • 2 spring onions
  • 1 chicken stock pot
  • 50g sweetcorn
  • 100g rice noodles

Preparation

Step 1

• Dice the chicken breast
• Finely the ginger, garlic and onion.
• Boil 300ml of water in the kettle.

Step 2

• Lightly fry the chicken breast until no longer pink

Step 3

• Add 500ml of boiling water

Step 4

• Add garlic, onion, ginger and stockpot. Leave to simmer for 5 minutes

Step 5

• Add the rice noodles. Leave to simmer until fully cooked through.

Step 6

• Leave for a few more minutes to ensure it is fully cooked.

Step 7

• Serve while still warm.
