  • 1 1/2lb raspberries
  • juice of 1/2 lemon
  • 6oz caster sugar
  • 3/4pt double cream
  • whipped

Step 1

Blend raspberries and lemon juice thru a sieve

Step 2

Add the caster sugar, then fold in the whipped cream.

Step 3

Freeze for 1hr.

Step 4

Remove from freezer, whisk until smooth

Step 5

Freeze until firm.
