Ingredients
- 100g dark chocolate
- 100g butter
- 1 tbspn brandy (or try some orange liqueur for a hint of orange)
- 55g caster sugar
- 2 large eggs and 2 large egg yolks (you can use the whites to make merguines)
- 3/4 tsp vanilla extract
- 30g plain flour

Preparation
Step 1
break up chocolate and place in a bowl with the butter and brandy/liqueur
Step 2
place bowl over a saucepan of simmering water and melt slowly.
Step 3
when the chocolate and butter have completely melted removed from the heat and stir well until it is smooth and glossy.
Step 4
Whilst the chocolate is melting place the eggs, yolks, sugar and vanilla into a bowl and whisk until light and doubled in size.
Step 5
Once the egg mixture leaves ribbon patterns add your sifted flour and chocolate mix to the egg mix and fold in gently until well combined.
Step 6
pour into 4 well greased pudding dishes cover with clingfilm and chill until required.
Step 7
To cook heat your oven to 200 and place in the oven for 14 minutes.
Step 8
Turn out and serve immediately.
Serve with clotted or double cream or a little bit of ice cream if you prefer.
