- 400g chicken thighs or breast cut into bite size pieces
- lemon juice
- 100g plain flour
- Salt and freshly ground black pepper
- Good pinch of paprika
- Cold water to make batter

Preparation
Step 1
place diced chicken in a bowl and cover will lemon juice. Leave to marinade for 5 mins
Step 2
Whilst chicken is marinading put deep fat fryer on to preheat.
Step 3
Make batter by mixing flour water and seasonings.
Step 4
Drain chicken pieces and dip into batter mix.
Step 5
drop chicken pieces into fryer and cook for approx 5 minutes until cooked through and golden brown.
Step 6
Drain on kitchen paper and serve.
These are great as a snack with some sweet chilli or mayo dip or as part of a main course with a jacket potato and salad.
