Red velvet cupcakes
Ingredients
- 60g unsalted butter
- 150g caster sugar
- 1 egg
- 20g cocoa powder
- 40ml red food colouring
- ½ tsp vanilla extract
- 120ml buttermilk
- 150g plain flour
- ½ tsp bicarbonate soda
- 1½ tsp white vinegar
- Icing:
- 300g icing sugar
- 50g unsalted butter
- 125g cream cheese

Step 1
Preheat the oven to 170°C
Step 2
In a bowl, smooth the butter and sugar together until fluffy. Add the egg and beat until combined.
Step 3
Take another bowl and mix the cocoa powder, red food colouring and vanilla extract.
It will become a dark paste. To this, add the butter mixture and combine well then add half of the buttermilk.
Step 4
Beat well then add half the flour and beat well again.
Add the rest of the buttermilk and beat, again.
Add the rest of the flour and beat it.
Add the bicarbonate of soda and vinegar. Then, beat it.
Step 5
Put the mixture into cupcake cases and bake for about 20 minutes. Test a cupcake with a toothpick to check it's cooked.
Step 6
For the icing: Mix well the icing sugar and butter and add the cream cheese.
Beat it until the icing is fluffy. Do not overbeat, as it can quickly become runny.
Step 7
When the cupcakes are cold, top them with cream cheese.
