Brie And Tomato Tart

A really easy to make weekday supper. Just roll out the pastry (or use ready rolled), load with your toppings and put in the oven...

Ingredients
- 250g / 8oz ready made puff pastry
- 200g / 7oz brie cheese
- 2-3 medium tomatoes
- 1 teaspoon dried oregano or basil
- Sprinkling freshly ground black pepper
- 8-10 olives (optional)

Preparation
Step 1
Preheat the oven to 180 degrees C
Step 2
Roll out the pastry to fit on a baking tray or roasting dish
Step 3
Score around the edges about 1 inch (2.5cm) from the edge
Step 4
Prick the pastry inside the scored edge with a fork
Step 5
Slice the brie and tomatoes
Step 6
Arrange the brie in rows over the pastry
Step 7
Place the tomatoe slices on top of the brie slices
Step 8
Sprinkle with dried oregano
Step 9
Arrange olives (if using) evenly over the pastry
Step 10
Bake in the oven for about 30 minutes, until pastry is puffed up at the edges and brown
Change the toppings to suit your tastes. Any leftovers are great eaten colde - add to your packed lunch the next day
