Preparation
Step 1
Keep the pastry on the greaseproof pastry and roll out onto the baking tray.
Step 2
spread the tomato purée out evenly to cover
Step 3
Cut the mozzarella ball into small pieces and cover
Step 4
Cut tomato into pieces and cover
Step 5
Cover in remaining ingredients and add extra cheese
Step 6
Place in the oven at Gas 6 (400°F) for approx 20 minutes or until the cheese is golden
I added a little mustard and Tikka curry sauce for a little spice before adding the puree and different types of cheeses. Also added mixed herbs and a little pepper. Serves as many as the tray holds, I cut the one we made into 12 small rectangles.
