Rabbit and cabbage casserole

slow cooked rabbit with savoy cabbage added later with onion, carrots and leek herbs and spices

- I rabbit skined gutted and cut into pieces, 1 savoy cabbage shredded, 1 red onion, 2 medium carrots, 1 small leek, 1.5 pints of chicken stock, 1teaspoon corriander, cumin and 1 anistee star

Step 1
wash the rabbit piece and coat in flour, fry in a little oil until browned add to casserol,chop the onion carrots and leek fry them to in the pan used for the rabbit, add to rabbit in cassrole dish, add the stock, and spices cover and put in oven for approx 2 hours 10 minutes before serving take the casserole out and stir in the shredded savoy cabbage and put back in the oven for the last 10 minutes take out and set aside for 5 minutes as very hot then serve with mashed potatoes a favorite in our house
rabbits are easily obtained from local butchers if you don't want to go out and catch one they skin and chop it up too. savoy cabbage is best but have used sweetheart and other when savoy not available
