Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup sugar, plus two tsp for blueberries
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 cups buttermilk
  • 1/4 cup milk
  • 3 Tbsp butter, melted and cooled
  • 1 egg lightly beaten
  • 2 cups blueberries

Preparation

Step 1

Beat together all ingredients except blueberries.

Step 2

Heat some butter in a frying pan and pour in 1/4 cup of batter at a time. Top with blueberries and cook.

Step 3

Serve with maple syrup.
