Ingredients
- 1 tbsp olive oil
- 3 red peppers deseeded and finely chopped
- 1 red onion thinly sliced
- 225g spicy chorizo
- 300g deli style coleslaw
- 1 large baguette
- 40g rocket leaves.

Preparation
Step 1
Heat the oil in a large frying pan then add the peppers and onion. Cook for 10-15 mins until just softened, then transfer to a bowl and keep warm.
Step 2
Using the same pan, cook the chorizo over a high heat for 3-4 mins, turning occasionally, until crisp.
Step 3
To serve, divide the coleslaw between the baguettes adding some rocket, top with the red peppers, onion and chorizo.
