  • 100g SR flour
  • 100g Butter
  • 100g sugar
  • 30ml milk
  • 2 Beaten eggs
  • 1 tsp Vanilla essence
  • Grated lemon zest
  • 3tbs golden syrup

Preparation

Step 1

Cream butter & sugar together

Step 2

Gradually add eggs and vanilla essence

Step 3

Add flour, milk & lemon zest

Step 4

Put golden syrup at bottom of 2 pt heatproof bowl.

Step 5

Spoon cake batter on top

Step 6

Cover and place in microwave for 3.5 minutes on High.

Step 7

Serve with custard, cream or ice cream.
