Ingredients

  • 175g butter
  • 150g sugar
  • 100g muscovado sugar
  • 75g cocoa powder
  • 50ml golden syrup
  • 100g plain flour
  • 1 tsp baking powder
  • 3 eggs
  • 100g dark chocolate
  • Topping:
  • lightly whipped cream
  • raspberries

Preparation

Step 1

Beat the butter, sugar and muscovado sugar in a bowl until creamy

Step 2

Mix in the cocoa powder and golden syrup

Step 3

In a separate bowl, mix the flour and baking powder

Step 4

Beat one egg at a time into the cocoa mixture

Step 5

Fold in the flour and baking powder

Step 6

Stir in the coarsely chopped chocolate

Step 7

Fill the muffin cups two-thirds full with the brownie batter

Step 8

Bake for 20 minutes at 180ºc / 350ºf / gas mark 4

Step 9

Leave to cool and add the topping
