Chickpea Pilaff

Ingredients

  • 2oz/50g bulgar wheat
  • 2 tbsp oil
  • 3oz/75g broccoli
  • 2oz/50g mushrooms
  • 2 tbsp tinned sweetcorn
  • ½ x 420g tin of chickpeas
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp mild curry paste
  • 150ml coconut milk

Preparation

Step 1

Put the bulgar wheat in a bowl, cover with boiling water

Step 2

Heat half the oil and stir fry the broccoli and mushrooms for 3 minutes

Step 3

Add the sweetcorn and chickpeas and mix well

Step 4

In a frying pan heat the remaining oil and fry the onion and garlic for 10 minutes

Step 5

Add the curry paste and stir through

Step 6

Add the coconut milk to the frying pan

Step 7

Simmer for 3 minutes

Step 8

Drain the bulgar wheat and add to the saucepan of broccoli etc

Step 9

Mix well and gently heat though

Step 10

Mix in the curried onion sauce and serve
