Fish - Prawn Pilaf

This is a great and terrifically easy dish, and it can be played about with all sorts of combinations
- 3 tbsp olive oil
- 1 onion finely chopped
- 1 red pepper sliced thinly
- 1 garlic clove crushed
- 225 gm long grain white rice
- 700 ml fish,chicken or veg stock
- 1 bay leaf
- salt and pepper
- 400 gm peeled cooked prawns
- To garnish – a handful of whole cooked prawns
- lemon wedges
- Greek black olives
- Serve with Pecorino cheese to grate over
- Cubes of Greek feta cheese
Pilau and Peaches

Pilaf, or pilau, is a dish where the long grain rice cooked in a pan with broth, or cooked in a stew
- 500 g chicken breast or turkey fillets
- 1 can of peaches
- 1 can of peeled tomatoes
- 1 large can of tomato paste
- 1 chicken stock cube
- 5 tbsp soy sauce
- 3 tsp sambal or tabasco
- a tad of Worcestershire sauce
- 1 onion
- 2 cloves of garlic
- a tad of cornstarch
- 1 regular cup of mushrooms
- butter
- Rice
Lamb Pilaf

- Ground Cumin
- Salt & Pepper
- 250g Basmati Rice
- 1 ltr Lamb Stock
- 250g Peas

Chickpea Pilaff

Put the bulgar wheat in a bowl, cover with boiling water
- 2oz/50g bulgar wheat
- 2 tbsp oil
- 3oz/75g broccoli
- 2oz/50g mushrooms
- 2 tbsp tinned sweetcorn
- ½ x 420g tin of chickpeas
- 1 onion
- 2 garlic cloves
- 1 tbsp mild curry paste
- 150ml coconut milk
